
Chef Patrick Lapaire, Executive Chef of The Alexander Hotel & Shula’s Steakhouse in Miami Beach, FL., distinguished himself by working and training in distinctive food service operations through out Europe and in the United States. He has attained awards and accomplishments that singled him out as an extraordinary practitioner. His culinary education was accomplished in the most traditional and time-honored of methods, the European apprenticeship system. Chef Lapaire apprenticed at Palais de Beauulieu, Congress Center, Lausanne, Switzerland (Seven Restaurants with 45 Chefs), and obtained his Chef Swiss Certificate of Capacity following a three year apprenticeship. The Swiss apprenticeship system is among the finest in the world.
Chef Lapaire also earned Diploma D’honneur Foundation Carnegie Swiss Confederation. He continued his education at the Hotel School in Lausanne, Switzerland. Again the Swiss system of education in hospitality management at the hotel school is recognized the world over for quality and perfection.
Chef Lapaire served for an extensive period of time as an Executive Chef on Costa Cruise Line. He was in charge of all food operations, and managed over 100 employees. He also previously served as Culinary Advisor for Walt Disney at Lake Buena Vista, Florida, USA.
Chef Lapaire is a member of “Les Toques Blanches International” and “Les Toques Blanches Americas.” He is a Chef Roitisseurs with Chaines des Rotisseurs. Chef Lapaire is a Swiss national who speaks 5 different languages to include: English, French, Italian, German and, Spanish.
Chef Lapaire joined The Alexander Hotel in May of 2006 and has proven to be a great addition to our team.
